Sauce Cups prep

Cheese sauce​

  • Each can makes 42-44 sauce cups.
  • Using an ice-cream scoop, place 2.5 ounces of cheese sauce into 3.5 oz. Souffle cup
  • Cover each cup with a lid and place onto a 1/2 sheet tray, then place in the walk-in cooler.

Ranch Sauce​

  • Scoop 3 ounces (weighed) into a souffle cup and cover with a lid.
  • Place cups in a 1/3 Lexan
  • Label the Lexan
  • Place the Lexan into the walk-in
